Ingredients: 1 1/2 lbs. boneless, skinless chicken thighs 3 cups low-sodium chicken broth 1 1/2 cups white wine 1 yellow onion, diced 3 cloves garlic, minced 1 teaspoon dried thyme 1/2 teaspoon freshly ground black pepper 8 oz. button mushrooms, quartered 4 oz. shiitake mushrooms, stemmed and sliced 2 tablespoons cornstarch 2 tablespoons cold water Kosher salt to taste Instructions:
1) In a large pot or Dutch oven, combine the chicken thighs, chicken broth, white wine, onion, garlic, thyme and black pepper. Bring to a simmer over medium heat and cook for 10 minutes. 2) Add the button mushrooms and shiitake mushrooms and continue cooking for 5 more minutes. 3) In a small bowl, dissolve the cornstarch in the cold water and add it to the pot. Bring to a simmer and cook until the soup thickens, about 5 minutes. Season with kosher salt to taste. 4) Serve hot with some good bread on the side. Enjoy!

In a large soup pot or Dutch oven over medium heat, warm the oil until it shimmers. Add the chicken thighs and cook until browned all over, about 8 minutes per side. Add the broth, onion, carrots, celery, bay leaf, thyme, salt, and black pepper to the pot. Bring to a simmer and cook for 30 minutes. Remove the pot from the heat and let cool slightly. Remove the chicken thighs from the pot and chop into bite-size pieces. Return the chicken pieces to the pot along with the morels and scallions. Simmer for 10 minutes longer to heat through. Discard the bay leaf before serving. Sprinkle each serving with some of the chopped parsley, dill weed, and scallions before eating.
